ENOTECA ROSE 2021

Variety:  Grenache, Cabernet Franc
Vintage: 2021
Type: dry rose wine
Vineyard: Own Vineyards, massif Terziysko
Colour: Extremely pale soft pink color
Aroma: An ethereal, delicate aroma of white peach, fresh herbs, dandelion, cold, wet stone.
Taste: Delicate taste with distinct notes of white peach, pleasant alkalinity and nuance of sea salt crystals
Vinification: entirely hand-picked vine harvest. Minimal contact of the skins with the grape juice in order to extract the delicate aromas and to avoid coarse phenolicity. Careful filtration to keep the delicate alkaline and salty notes in the taste
Serving temperature: 10-12°C
Food pairing suggestions: Perfect combination with Saint Jacques mussels, sushi, squid on a plate, beef carpaccio.

Origin: Our own vineyards in the Karnobat area, vineyeards Shibilevi Bresti
Type: Dry white wine
Colour: sparkling golden color
Aroma: complex, with herbal accents, shades of dried yellow fruits, quince and honey. The taste is also intense and complemented by elegant mineral notes
Taste: rich and fresh, with a very good structure and long impact, bright finish and long aromatic aftertaste
Serving temperature: 10– 12°C
Food pairing suggestions: seafood with intense flavours, pizza and pasta with vegetable additions, white meat courses with spices

Origin: our own vineyards in the Karnobat area
Type: dry red wine

Vintage: 2017
Colour: A beautiful, deep ruby color.

Aroma: ethereal, rich aroma dominated by ripe sour cherry and spicy accents of cedar, tobacco and clove.

Taste: the taste is elegant, with a feeling of cherry jam, exotic spices and cloves, the tannins are soft, velvety, with a long impact and a very long finish reminiscent of the rich aroma.

Mature: 14 months in 10 old French barrels 500 l. Potential to age in bottle 7+ years.

Serving temperature: 15-17°C

Colour: light golden, shiny

Aroma: fruity nuances of pineapple, apple and grapefruit are felt, pleasantly combined with discreet spicy spices. Tastefully, pleasant cream tones are added to the aroma.

Taste: with good structure and soft freshness with a delicate effect. The finish is soft and fragrant.

Serving temperature: 10 – 12°C
Mature: 9 months in new French barrels

Aroma: The aroma is spectacular, with a feeling of red and black ripe fruit - cherry, sour cherry.

Taste: The body is powerful, sweet and juicy, with suede mature tannins. Very elegant wine, with excellent maturation potential and remarkably noble posture.

Mature: 12 months in new barrels of French oak. Potential to age in bottle 10+ years.

Type: Dry white wine
Colour: features a beautiful light golden color.

Aroma: the aroma is intense, with a muscat character but enriched with spicy herbal nuances, especially in the nasal aroma. The taste aroma is also intense and dominated by nuances of indrishe and geranium.

Taste: with a good structure, pleasant freshness and long impact. The finish is refreshing and fragrant.

Serving temperature: 8 – 10°C

Aroma: captivating with dominant plant shades, mostly boxwood, nettle and green peach, with a feeling of spiciness. The taste aromas are complex, the plant tones are perceived again, perfectly combined with accents of prestigious wood.

Taste: fresh, with a feeling of bright but unobtrusive freshness. The finish is very long with a memory of the spectacular aroma.

Colour: thick, ruby with purple hues color.

Aroma: rich, gradually revealing aroma, based on generous palette of ripe red fruits – cherries, black currant, complemented by sweet spices, minced peppers and chocolate that form strong structure with distinct but polished tannins.

Taste: Dense with a feeling of ripe sweetness, with a rich, elegant texture and mature, velvety tannins. The finish is long, memorable with a sense of fine spices.

Mature: 28 months in new barrels of French oak. Potential to age in bottle 10+ years.

Taste: complex, long, tight and flexible body with refined, complex, concentrated taste, revealing aromas of blackcurrant, dark chocolate, spices, soft, ripe, resistant tannins, and pleasant freshness promising long life

Mature: 27 months in new barrels of French oak. Potential to age in bottle 10+ years.
