Mature: 12 months in old French barrels, with aging potential in the bottle for 6+ years

Aroma: An ethereal, delicate aroma of white peach, fresh herbs, dandelion, cold, wet stone.
Taste: Delicate taste with distinct notes of white peach, pleasant alkalinity and nuance of sea salt crystals
Vinification: entirely hand-picked vine harvest. Minimal contact of the skins with the grape juice in order to extract the delicate aromas and to avoid coarse phenolicity. Careful filtration to keep the delicate alkaline and salty notes in the taste
Serving temperature: 10-12°C
Food pairing suggestions: Perfect combination with Saint Jacques mussels, sushi, squid on a plate, beef carpaccio.

Taste: the taste is elegant, with a feeling of cherry jam, exotic spices and cloves, the tannins are soft, velvety, with a long impact and a very long finish reminiscent of the rich aroma.
Mature: 14 months in 10 old French barrels 500 l. Potential to age in bottle 7+ years.
